Hot Dogs with Guacamole

Guacamole isn't just for your chips anymore. Try this amazing guacamole recipe from Erica Dinho and spread it on top of a perfectly cooked hot dog for a Colombian style treat.

Ingredients:

2 Ripe avocados

1/3 cup finely chopped white onion

Juice of 1 lime

1/2 cup chopped fresh cilantro

1 Small jalapeño pepper, deseeded and finely chopped

1 Small ripe tomato, chopped

Salt and pepper

Preparation:

Cut each avocado in half, working around the pit. Twist apart, and remove the pit with a knife. Peel off the skin and toss in a bowl. Add the lime juice to prevent from browning, mash the avocados. Add the onion, jalapeño pepper, tomato, cilantro, pepper and salt.

In a medium pot bring water to a boil. Add the hot dogs to the boiling water and cover. Cook about 5 – 7 minutes.

Remove and drain on paper towels.

Place the hot dogs in the buns and top with guacamole and chopped onions.
