These signature Balsamic Marinated Beef Kabobs are fresh off the grill. Marinated in the new Newman’s Own Organic Balsamic Vinaigrette and paired with fresh summer vegetables like zucchini and tomatoes, these skewers are a quick and easy yet flavorful summertime favorite. Ingredients:
3 pounds boneless rib eye steak, trimmed and cubed
1 bottle Newman's Own® Organic Balsamic Vinaigrette Dressing
Freshly ground black pepper
2 cartons cherry tomatoes, washed
3 yellow summer squash, cut to ¾-inch pieces
3 zucchini, cut to ¾-inch pieces
1 carton white button mushrooms, wiped cleaned with damp cloth
1 box crimini mushrooms, wiped cleaned with damp cloth
12 wooden skewers soaked in water, or metal skewers
Preparation:
Wash and cut all veggies into bite-size pieces. Trim and cube the meat.
Push meat and veggies onto skewers, alternating them as you please.
Lay all of the kabobs in a rectangular baking dish or Tupperware container, using more than one if needed.
Pour dressing over kabobs and season with freshly ground black pepper. Marinate for at least one hour.
Heat grill to medium high and cook kabobs for approximately 4-5 minutes on each side, basting with left over dressing.
Enjoy with a salad, seasonal vegetables and crusty bread.
