Spaghetti with Pesto Sauce
Serves 4-6
Ingredients
1 pound spaghetti
1/3 cup olive oil
2 cloves garlic
Salt and pepper, to taste
1/4cup grated Pecorino-Romano cheese
2 bunches fresh basil, leaves removed from stems
1/2 teaspoon crushed red pepper flakes
1/2 cup (1 stick) salted butter, softened

Bring a large pot of water to boil. Cook spaghetti according to package instructions, and reserve about ¼ cup cooking water. Set aside. Combine the rest of the ingredients in a blender and add the reserved pasta cooking water to the blender to loosen the mixture. Blend the ingredients again, and toss with the cooked spaghetti in a large bowl.
